Grilled Portabello Mushrooms

Here is my take on a popular alternative to a hamburger. Marinated Portabello mushrooms with Bison Burger grilled to perfection! There are two ways to serve this recipe, with or without the Bison burger, depending on your guests. I prefer it with the Bison so that's how we will proceed!

First things first, the grocery list after the jump.






  • 1 cup Italian dressing, low calorie
  • 4 Portabello mushroom tops
  • 2 cups fresh spinach
  • 1 medium onion
  • 1 tbl olive oil
  • 3 cloves garlic
  • 4 tbl feta cheese
  • 1/2 lb Bison burger
  • 1 egg
Remove the stem portions of the mushrooms and chop them fine, combine with the bison burger and egg and make 4 small patties that will fit inside the mushroom caps. set aside.

Place the mushrooms in a zipper bag and add the Italian dressing, squeeze as much air out as possible, let marinate at least 8 hours. 

Chop the onion and the garlic and saute in a pan with the olive oil, add the spinach and cook until the onions are translucent. You can do this on the grill if you have room or on the stove, your choice.

Fire up the grill, cook the mushroom caps and the bison burgers until done. about 20 min for the mushrooms. 

Assembly! Open your bun of choice and place the mushroom bottom up, spoon in a tablespoon or two of the onion/spinach mixture. Add 1 tablespoon of feta cheese, then place a bison burger on top. add top of bun and enjoy!

Optional is tomato slice, extra onion slice, ketchup or BBQ sauce. Toast the buns on the grill if you like. Even without the Bison this is a tasty
