Beer Marinade for Ribs

OK! You're gonna love this one. Mix this beer marinade for your pork or beef ribs and they will be the best ever! If they are a full rack of pork ribs, make sure you peel the thin layer off the back of the ribs first, this will allow all the marinade into the meat and it doesn't need to be eaten anyway.

The type and brand of beer is your personal choice, I use Sam Adams Boston Lager, but you can use what ever you like.

OK The ingredients list.

  • 3 Bottles of beer
  • 2 cups brown sugar
  • 1/4 cup cider vinegar
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 2 teaspoons ground mustard
  • 1 tablespoon cayenne pepper
  • 1/2 teaspoon ground cloves
  • 1 tablespoon kosher salt
  • 4 cloves garlic, peeled, crushed and chopped
  • 1 bay leaf
Combine all the ingredients in a large bowl and mix well. let it sit for an hour to get all the ingredients to mingle. Set aside 2 cups of the finished marinade for basting the ribs later. Using a large zipper bag or even a stock pot, put your ribs in, pour the marinade over them and let refrigerate at least 8 hours. 

Grill or slow smoke the ribs when ready basting them with the extra marinade every once in awhile to keep them from drying out. And if your so inclined, enjoy the rest of the six pack while you cook and enjoy your ribs with some fresh coleslaw or potato salad.

  1. I just made this with Sam Adams Cherry Wheat and I have a whole pork loin cut into three large sections marinading in it for an all day smoker session Tomorrow for pulled pork. I'll let you all know how it comes out!
